CHLODNIK Well known, well liked soup, served chilled, very popular on hot summer days. Vegetarian or meaty.

Ingredients:

• 3-4 beets with greens
• 0.5L of water
• 1tbsp vinegar or lemon
• 1L of buttermilk
• 0.5 cup of sourcream
• 1tsp of sugar
• 2 hardboiled egs
• 1 cucumber, sliced
• Fresh dill to sprinkle
• Fresh onion, few rings, chopped
• Salt, to taste
• Old, traditional recipes use crayfish and beef broth instead of water (optional)

Cook beets in 0.5L water with lemon juice, for 30 minutes.

Let cool.

Chop beets and greens. Add buttermilk, sourcream, sugar, salt, cucumber, dill, eggs, onion.

Place in fridge, serve chilled.
