Here's how I make my salsa, note that no tomatoes are used.
Ingredients:
- Chili peppers, 10
- Jalapeno peppers, 8
- Green pepper, 1 large
- Large English cucumber, half
- Garlic, 3 large cloves
- Onion
- Lime
- Olive oil, 2-3 TBSP
- Wine vinegar, 1 TBSP
- Oregano, 1 TSP
- Parsley, 2-3 TSP
Sometimes I like to add white cabbage.
Preparation:
Chopped all ingredients into very fine pieces. Added 2 or 3 TBSP of oil, and lime juice. That's it. It took under 10 minutes, including washing. This made just over three cups of excellent salsa. Will last at least 2 weeks in the fridge.
